  • 4 cloves garlic, minced
  • 2 tablespoons Dijon mustard
  • 2 tablespoons packed light brown sugar
  • 1 tablespoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 2 tablespoons olive oil
  • 2 teaspoons salt, or to taste
  • 1 teaspoon black pepper, or to taste
  • 2 tablespoons all-purpose flour (optional)
  • 2 tablespoons water (optional)

Instructions

  1. Pat the beef shoulder dry and season generously with salt and pepper.
  2. Heat olive oil in a Dutch oven over medium-high heat; sear the beef on all sides until browned.
  3. Sauté onions in the same pot until softened, then add apples and garlic.
  4. Deglaze with apple cider vinegar, then add apple cider and chicken broth along with seasonings.
  5. Return the beef to the pot, ensuring liquid covers halfway; bring to a simmer.
