  • 2 cups digestive cookies or graham crackers
  • ½ cup melted butter
  • 3 cups fresh apple cider
  • 3 cream cheese bricks (softened)
  • 1 cup brown sugar
  • 1 cup sour cream
  • 3 large eggs
  • Mulling spices and cinnamon

Instructions

  1. Prepare the apple cider reduction by boiling cider with mulling spices until thickened (about 1 hour). Cool and set aside.
  2. Preheat your oven to 350°F (175°C).
  3. Make the crust by blending cookies in a food processor, then mixing in melted butter, salt, and powdered sugar. Press into an 8” springform pan and bake for 10 minutes.
  4. Reduce oven temperature to 325°F (160°C) and prepare the filling by beating cream cheese and brown sugar until smooth. Add sour cream, vanilla, reduced cider, salt, cinnamon, eggs one at a time, and flour; mix until just combined.
  5. Pour filling into cooled crust and bake in a water bath for about 90 minutes or until edges are set but center is slightly wobbly.
  6. Turn off the oven, crack open the door, and let cool for 45 minutes before refrigerating for at least eight hours.
