  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream or Greek yogurt
  • 1¾ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F. Grease a 9” square baking dish and line with parchment paper.
  2. In a sauté pan, boil fresh apple cider until reduced by half (about 5 minutes). Whisk in diced butter until melted.
  3. In a bowl, combine eggs, sugars, oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt. Mix well.
  4. Add boiled cider mixture to wet ingredients and blend thoroughly.
  5. Stir in flour until just combined; do not overmix.
  6. Pour batter into the prepared dish and bake for 22–25 minutes until golden brown.
  7. Cool slightly before brushing melted butter on top and sprinkling with cinnamon sugar.
