  • 2 apples, peeled and diced
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tbsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 2 eggs
  • ½ cup milk
  • 2 tbsp melted butter
  • Oil for frying

Instructions

  1. Reduce the apple cider in a saucepan over medium heat until it thickens to about ¼ cup; set aside to cool.
  2. In one bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix eggs, milk, reduced cider, and melted butter until combined.
  4. Pour the wet mixture into the dry ingredients and fold in diced apples gently.
