  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 medium apples, peeled, cored, and diced

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, use an electric mixer to cream the softened butter and sugar until light and fluffy. Add eggs one at a time and mix well after each addition. Stir in vanilla.
  4. Gradually add dry ingredients to wet mixture while alternating with sour cream until just combined. Gently fold in diced apples.
  5. Pour half the batter into the prepared pan and sprinkle with half of a cinnamon-sugar mixture (made by mixing sugar with cinnamon). Add remaining batter on top followed by the rest of the cinnamon-sugar mixture.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean. Let cool for 10 minutes before transferring to a wire rack.
