  • 1 tsp yellow miso paste, optional

  • 1/4 tsp kosher salt or more to taste
  • 3/4 cup soy milk
  • 1/3 cup chia seeds
  • 3 tbsp gluten-free rolled oats
  • 3 tbsp walnuts or pecans
  • 2 medjool dates
  • 2 apples, diced or thinly sliced
  • 2 tsp maple syrup

Instructions

  1. In a blender, combine yogurt, apple butter, medjool date, vanilla extract, spices, salt, and soy milk. Blend until smooth.
  2. In a bowl or storage container, mix chia seeds with the blended mixture. Whisk well and let sit for 5 minutes. Whisk again to break clumps, cover, and refrigerate for at least 1 hour.
  3. For the crumble topping: Pulse oats, nuts, and dates in a mini food processor until crumbly.
  4. For the stewed apples: Sauté diced apples with maple syrup and cinnamon in a pan over medium-low heat for 3-4 minutes until softened.
  5. To serve: Layer chia pudding in jars, top with stewed apples and sprinkle with crumble topping.
