2 cups all-purpose flour
1 ½ cups diced apples (Granny Smith or Honeycrisp)
½ cup unsalted butter
¾ cup light brown sugar
1 tablespoon ground cinnamon
2 large eggs
¼ cup sour cream (or Greek yogurt)
½ teaspoon baking powder
1 teaspoon pure vanilla extract
½ cup milk
¼ cup granulated sugar
1½ teaspoons baking powder
½ teaspoon salt
Instructions
Preheat your oven to 400°F and line a muffin tin with paper liners.
For the crumble topping, mix flour, sugars, and cinnamon in a bowl. Stir in melted butter until clumps form; set aside.
In another bowl, whisk together dry ingredients: flour, baking powder, salt, and cinnamon.
In a large mixing bowl, beat butter and sugars until fluffy. Add eggs, sour cream, and vanilla extract; mix well.
Mix in half of the dry ingredients followed by milk, then add the remaining dry ingredients until just combined. Gently fold in diced apples.
Divide batter into muffin cups and top generously with crumble mixture.
Bake for about 20 minutes or until toothpick comes out clean.
