  • 1 teaspoon vegetable or canola oil
  • ½ medium red onion (finely chopped)
  • 1½ teaspoons minced fresh thyme
  • ½ teaspoon salt (divided)
  • 16 ounces skinless, boneless chicken breasts (4 cutlets)
  • ⅓ cup all fruit or reduced-sugar apricot jam
  • 2 tablespoons balsamic vinegar
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. In a large nonstick skillet, heat the oil over medium heat until hot. Add the chopped onion and sauté for about 5 minutes until softened.
  2. Sprinkle the chicken with thyme and ¼ teaspoon of salt. Add to the skillet; sauté for approximately 6 minutes on each side or until fully cooked. Remove from pan and keep warm.
  3. In the same pan, reduce heat to medium, add remaining salt, jam, balsamic vinegar, and pepper. Stir constantly until smooth.
  4. Spoon the sauce over the chicken and serve immediately.
