  • 1/2 cup butter (softened)
  • 1/2 cup packed brown sugar
  • 1/4 tsp baking soda
  • 1 1/4 cups rolled oats
  • 3/4 cup flour
  • 1 cup apricot preserves

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 or 9×9 baking dish.
  2. In a mixing bowl, blend the softened butter, brown sugar, baking soda, rolled oats, and flour until well combined.
  3. Press 2 cups of the oat mixture firmly into the bottom of the prepared baking dish to create a crust.
  4. Spread the apricot preserves evenly over the crust, leaving about a 1/4-inch border.
  5. Sprinkle the remaining oat mixture over the top of the preserves evenly.
  6. Bake for 30-35 minutes until golden brown.
  7. Allow to cool completely before slicing into squares.
