  • 1 pound turkey sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 6 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 package (9 ounces) cheese tortellini
  • 2 cups fresh spinach leaves

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add turkey sausage and cook until browned—about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté onion, carrots, and celery until tender (about 5 minutes). Stir in garlic and Italian seasoning; cook for 1 minute.
  3. Pour in chicken broth and diced tomatoes; add cooked sausage back to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add tortellini according to package instructions (7-9 minutes or until tender).
  5. Stir in spinach until wilted (1-2 minutes). Season with salt and pepper to taste.
