  • 1 whole grain or rye English muffin or bun, halved and toasted
  • avocado, mashed
  • 2 tbsp cottage cheese
  • Pinch of paprika or chili powder
  • Fresh parsley for garnish
  • Salt & pepper to taste
  • 2 soft-boiled eggs

Instructions

  1. Place eggs in boiling water and cook for 7 minutes.
  2. Transfer them to an ice water bath to cool down quickly.
  3. Once cooled, peel the eggs and cut them in half.
  4. Toast the whole grain rounds until they are crisp.
  5. Spread mashed avocado generously on each toasted half.
  6. Top with cottage cheese.
  7. Sprinkle a pinch of paprika and add fresh parsley as a garnish.
  8. Serve the toasted halves on a plate alongside the halved soft-boiled eggs.
