  • 2 salmon fillets (150-180g each)
  • 1 tsp Cajun seasoning
  • Salt and black pepper, to taste
  • 3 tbsp olive oil
  • 1 bunch asparagus, trimmed
  • 1 cup shredded mozzarella
  • 2 cups baby potatoes, halved
  • 2 cloves garlic, minced
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Toss halved baby potatoes in olive oil, minced garlic, salt, and pepper. Spread evenly on a baking tray and roast for 25-30 minutes, flipping halfway.
  2. On another tray, lay out the trimmed asparagus. Drizzle with olive oil and season. Bake for 12-15 minutes; add mozzarella in the last five minutes until melted.
  3. Season the salmon fillets with Cajun seasoning and olive oil. Bake or pan-sear until just cooked through (12-15 minutes).
  4. Assemble your plate with crispy potatoes on the bottom, topped with salmon and cheesy asparagus. Garnish with fresh parsley before serving.
