Baked Feta Potatoes are a deliciously creamy and crispy side dish that elevates any meal.   • 2 large baking potatoes
  • 200g feta cheese
  • 1 head of garlic
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chilli flakes
  • 1 lemon, quartered
  • 1 tbsp honey
  • 1/4 cup | 20g fresh basil

Instructions

  1. Preheat your oven to 200C | 390F.
  2. Wash and cube the potatoes. Par-boil them in salted water for 6-8 minutes until slightly tender. Drain and let them steam dry.
  3. Place the par-boiled potatoes in a baking dish. Drizzle with olive oil, season with thyme, oregano, salt, black pepper, and red chili flakes. Toss gently to coat.
  4. Roast the potatoes for 30-40 minutes until golden brown.
  5. Add feta cheese to the center of the dish along with the cut head of garlic and squeezed lemon juice; roast for an additional 15 minutes.
  6. After roasting, mash the garlic and mix it with the potatoes along with fresh basil leaves.
  7. Drizzle honey over the dish before serving warm.
