  • 1/2 tsp salt (divided)
  • Avocado oil spray (or 1 to 2 tsp liquid oil)
  • 1 tsp smoked paprika
  • 1/4 tsp ground pepper

Instructions

  1. Slice the zucchini crosswise into 1/8 inch thick slices using a mandolin slicer or food processor. Layer in a colander, sprinkling with salt as you go. Allow to drain for one hour.
  2. Preheat the oven to 225°F and line two baking sheets with parchment paper.
  3. Pat the zucchini slices dry with a tea towel and arrange them on the prepared baking sheets without overlapping. Spray lightly with avocado oil or brush with liquid oil.
  4. Mix smoked paprika, ground pepper, and remaining salt in a spice shaker; sprinkle over zucchini slices.
  5. Bake for 70 to 90 minutes until crisp, rotating sheets halfway through baking.
