  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar (replaced with fruit juice if needed)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a bowl, whisk together balsamic vinegar, honey (or maple syrup), basil, oregano, and garlic until combined.
  4. Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes on each side until golden brown.
