  • 4.5 tablespoons unsalted butter
  • 3 bananas (sliced)
  • 1/3 cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • 1 ½ teaspoons vanilla extract
  • 1/3 cup Greek yogurt or sour cream
  • 2 large eggs
  • 2 overripe bananas (mashed)
  • 1 cup all-purpose flour
  • ¾ cup whole wheat flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • Dash of salt
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8 x 8 x 2 inch square or a 9 x 2 inch round cake pan.
  2. For the topping, spread brown sugar on the bottom of the pan and scatter pieces of butter over it. Bake for about 5–7 minutes until melted, then stir to combine and arrange sliced bananas on top.
  3. In a bowl, mix together all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.
  4. In a large bowl, cream softened butter and granulated sugar until combined. Add eggs and vanilla extract; mix well.
  5. Incorporate Greek yogurt or sour cream and mashed bananas into the mixture.
  6. Gradually add dry ingredients to the wet mixture until just combined. Pour batter over arranged bananas and smooth the top.
  7. Bake for about 30 minutes at 350°F, then reduce heat to 325°F and bake for an additional 25–35 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool before inverting onto a plate.
