  • 1 pound (450g) beef sirloin or flank steak, thinly sliced
  • 1 package (about 1 lb) baby bok choy, ends trimmed
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons low sodium soy sauce
  • Optional: 1 tablespoon plant-based oyster sauce

Instructions

  1. Slice the beef thinly against the grain.
  2. Trim and rinse the bok choy leaves.
  3. Heat vegetable oil in a wok over medium-high heat.
  4. Cook beef in a single layer for about 2–3 minutes until browned; flip and cook for another 1–2 minutes, then remove from the wok.
  5. Sauté garlic and ginger in the same wok for about 30 seconds until fragrant.
  6. Add bok choy to the wok and toss for 2–3 minutes until wilted.
  7. Return cooked beef to the pan, add soy sauce (and plant-based oyster sauce if using), stir-fry for another minute, then serve.
