  • 2 large eggs
  • 1/2 cup vegetable oil (or melted and cooled butter)
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil (or melted butter), and vanilla extract. Fold in the dry ingredients until just combined.
  4. In another bowl, beat cream cheese until smooth; mix in granulated sugar, egg yolk, and vanilla extract until well blended.
  5. Fill muffin cups three-fourths full with batter and swirl in the cream cheese mixture using a toothpick.
  6. Bake for 18 to 20 minutes or until a toothpick inserted comes out clean with few moist crumbs.
