  • 1 ½ pounds sweet potatoes
  • 14.5 ounces black beans
  • ½ cup frozen yellow corn
  • 4 Tablespoons olive oil (divided)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground coriander
  • 1 teaspoon sea salt
  • ¼ teaspoon pepper
  • 1 ½ cups green pepper (cut into 1" pieces)
  • 1 cup red pepper (cut into 1" pieces)
  • 3 Tablespoons honey
  • 3 Tablespoons lime juice
  • 3 Tablespoons fresh cilantro (chopped)
  • Corn or flour tortillas

Instructions

  1. Preheat oven to 425°F and grease a baking sheet.
  2. In a bowl, mix sweet potato cubes with olive oil and spices. Spread on the baking sheet.
  3. Roast for 20 minutes, stir halfway through.
  4. Add green and red peppers coated in oil and seasoning; roast for another 20 minutes.
  5. Mix honey, lime juice, and cilantro in a bowl for the sauce.
  6. Combine roasted veggies with black beans and corn; drizzle sauce over top and roast for an additional 10–15 minutes.
  7. Serve in tortillas with desired toppings.
