  • 5 egg whites
  • 1 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 2 tsp lemon juice
  • 2 cups blackberries
  • 1/4 cup sugar (or sweetener of choice)
  • 1 1/2 cups cold heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 275°F (135°C).
  2. In a clean bowl, beat egg whites on medium speed until soft peaks form. Gradually add granulated sugar while mixing on high speed until stiff peaks form. Fold in cornstarch, lemon juice, and food coloring.
  3. Line a baking sheet with parchment paper and spoon or pipe small rounds of meringue onto it, creating nests.
  4. Bake for about 60 minutes until crisp and dry. Turn off the oven and leave them inside to cool completely.
  5. In a saucepan, combine blackberries, sugar, lemon juice, cornstarch, and water over medium heat until thickened; set aside to cool.
  6. Beat cold heavy cream with powdered sugar until stiff peaks form.
  7. Assemble by adding blackberry jam into each meringue shell, topping with whipped cream and fresh blackberries.
