  • 4 lamb shanks (about 2 lbs total)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 cup apple vinegar
  • 2 cups beef broth
  • 2 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 bay leaves

Instructions

  1. Season lamb shanks with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat and sear the shanks until browned on all sides (about 5 minutes per side). Remove and set aside.
  2. In the same pot, add onions, garlic, carrots, and celery; cook until softened (about 5-7 minutes). Stir in tomato paste and cook for another minute.
  3. Pour in apple vinegar to deglaze the pot, scraping up browned bits. Add broth along with herbs; return lamb shanks to the pot.
  4. Bring to a simmer on stovetop; cover and transfer to a preheated oven at 325°F (160°C). Bake for about 2-3 hours until meat is fork-tender.
