  • 1 slice whole grain or sourdough bread
  • 1 avocado
  • 2 soft-boiled eggs
  • 2 small chicken or turkey breakfast sausages
  • 2 tbsp cottage cheese
  • 1 cup sauerkraut
  • 1 banana
  • 1 cup raspberries
  • 1 cup blueberries

Instructions

  1. Boil water in a pot. Add eggs and cook for 7 minutes. Transfer to cold water to stop cooking. Peel and halve.
  2. Toast the bread until golden brown. Mash avocado with a pinch of salt and spread on toast.
  3. Cook sausages in a pan over medium heat until golden brown.
  4. Assemble your bowl: start with avocado toast, add soft-boiled eggs and cottage cheese, layer sauerkraut, banana slices, raspberries, blueberries, and sausages.
