  • 2 boneless, skinless chicken breasts
  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Italian seasoning, garlic powder, salt and pepper to taste

Instructions

  1. Cook pasta in boiling salted water until al dente. Drain and set aside.
  2. Season chicken with Italian seasoning, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat; cook chicken for 5-7 minutes on each side until golden brown. Remove and let it rest before slicing.
  4. In a bowl, mix diced tomatoes, minced garlic, basil, balsamic vinegar, olive oil, and salt for the bruschetta topping.
  5. Toss the cooked pasta in the same skillet used for chicken; top with sliced chicken and bruschetta mixture.
  6. Serve warm with grated Parmesan cheese.
