  • 2 tbs cornstarch
  • ½ tsp salt
  • 1 tsp baking powder
  • ½ cup unsalted butter (room temperature)
  • ¾ cup granulated sugar
  • 2 large egg whites (room temperature)
  • 2 tbs canola oil
  • ⅓ cup milk (room temperature)
  • 1 tsp vanilla
  • ¼ cup rainbow sprinkles
  • 1 stick unsalted butter
  • 1.52 cups powdered sugar
  • ½ tsp vanilla
  • 12 tablespoons milk or cream
  • Pinch salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare mason jars by washing and drying them.
  2. In one bowl, whisk together flour, cornstarch, salt, and baking powder.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add egg whites, canola oil, milk, and vanilla to the butter mixture; mix until well combined.
  5. Gradually incorporate the dry ingredients into the wet mixture; fold in rainbow sprinkles.
  6. Spoon batter into jars, filling halfway, and place on a baking sheet. Bake for about 15 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool before adding frosting made from creamed butter, powdered sugar, milk, and vanilla.
