  • 75 grams finely diced apples (1 small apple)
  • 1/4 teaspoon cinnamon
  • 60 grams salted caramel
  • 100 grams egg whites (room temperature)
  • 1/4 teaspoon cream of tartar
  • 60 grams granulated sugar
  • 110 grams almond flour (sifted)
  • 200 grams powdered sugar (sifted)
  • 12 drops red food coloring
  • 113 grams unsalted butter (room temperature)
  • 180 grams powdered sugar
  • 60 grams salted caramel

Instructions

  1. Prepare the apple filling by cooking diced apples with butter and cinnamon until tender; stir in salted caramel and let cool.
  2. Make macaron shells by whisking egg whites with cream of tartar; gradually add sugar until stiff peaks form. Fold in sifted almond flour and powdered sugar along with food coloring.
  3. Pipe small circles on parchment-lined baking sheets and let them rest to form a skin before baking at 300°F (150°C) for about 15 minutes.
  4. Beat butter until creamy for the buttercream; mix in powdered sugar and salted caramel until smooth.
  5. Assemble by pairing macaron shells and piping buttercream between them.
