  • ¼ cup rice vinegar
  • ¼ cup hoisin sauce
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 2 tablespoons sesame oil
  • 1 tablespoon chili paste (optional)
  • green onions, chopped (for garnish)

Instructions

  1. Rinse the beef short ribs under cold water and pat dry.
  2. In a large bowl, whisk together soy sauce, brown sugar, rice vinegar, hoisin sauce, ginger, garlic, sesame oil, chili paste (if using), and black pepper until combined.
  3. Marinate the short ribs in a resealable bag or bowl with the marinade for at least 2 hours or overnight.
  4. Preheat the oven to 325°F (160°C).
  5. Sear the marinated ribs in a skillet over medium-high heat until browned on all sides (about 3-4 minutes per side).
  6. Place seared ribs in a roasting pan and pour remaining marinade over them.
  7. Cover with aluminum foil and roast for 3-4 hours or until fork-tender.
  8. In the last 30 minutes of roasting, remove the foil to allow caramelization.
  9. Let rest for 10-15 minutes before slicing; garnish with green onions and sesame seeds.
