  • Olive oil
  • Kosher salt
  • 2 TBSP unsalted butter
  • 2 TBSP all-purpose flour
  • 1 cup milk (whole or 2%)
  • 5.5 ounces freshly grated medium cheddar cheese
  • 2 cups finely chopped broccoli florets

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the russet potatoes, then pat them dry. Drizzle with olive oil and sprinkle with kosher salt.
  3. Place the potatoes on a baking tray lined with aluminum foil and bake for about 50 minutes until tender.
  4. Meanwhile, in a saucepan over medium heat, melt the butter and whisk in the flour until smooth. Gradually add milk while whisking until thickened.
  5. Stir in cayenne pepper, garlic powder, salt, and half of the cheddar cheese until melted. Add broccoli florets and cook until tender.
