  • 1 cup heavy cream
  • 1/2 cup amaretto liqueur
  • 1/2 cup cherry juice
  • 1 cup fresh cherries, pitted and chopped
  • 1/4 cup granulated sugar
  • 1 package ladyfingers
  • Cocoa powder (for dusting)
  • Dark chocolate shavings (for garnish)

Instructions

  1. In a mixing bowl, beat mascarpone cheese and heavy cream until smooth. Add amaretto, cherry juice, and vanilla extract; mix until well combined.
  2. In another bowl, blend sugar with cherry preserves. Fold this into the mascarpone mixture along with the fresh cherries.
  3. Dip ladyfingers in a mix of amaretto and cherry juice; layer them in a baking dish. Spread half of the mascarpone mixture over the ladyfingers.
  4. Repeat with another layer of dipped ladyfingers and top with remaining mascarpone mixture.
  5. Cover and refrigerate for at least 4 hours or overnight. Before serving, dust with cocoa powder and add dark chocolate shavings.
