  • 2 slices sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken
  • 2 slices cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, mash the avocado with lemon juice, seasoning with salt and pepper to taste.
  2. Spread mayonnaise on one side of each slice of bread. On one slice, spread the avocado mixture; layer with shredded chicken and cheese. Top with the second slice of bread (mayo side facing out).
  3. Heat a skillet over medium heat and melt butter. Add the sandwich to the skillet, grilling for 3–4 minutes per side until golden brown and cheese melts.
  4. Slice in half and serve hot.
