  • 3 large eggs

  • ½ cup cocoa powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup milk
  • 2 ¼ cups grated zucchini
  • ½ cup butter (melted)
  • ⅔ cup cocoa powder
  • 3 cups powdered sugar
  • ⅓ cup whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round baking pans or line them with parchment paper.
  2. In a large mixing bowl, beat together granulated sugar and vegetable oil until smooth. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In another bowl, sift together flour, baking powder, baking soda, cocoa powder, ground cinnamon, and salt. Gradually add this mixture alternately with milk to the wet ingredients until just combined. Gently fold in the grated zucchini.
  4. Pour the batter evenly into prepared pans and bake for about 60 minutes or until a toothpick inserted comes out clean. Allow to cool in pans for about 10 minutes before transferring to wire racks.
  5. For the frosting, combine melted butter and cocoa powder in a medium bowl until smooth. Gradually add powdered sugar alternating with milk until desired consistency is reached. Stir in vanilla extract.
  6. Once cakes are cooled completely, frost between layers and on top.
