  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine the brown sugar, softened butter, and cinnamon until smooth. Set this mixture aside.
  3. In a large bowl, mix together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt until well combined. Set aside.
  4. Place the cubed butter into your stand mixer bowl fitted with the paddle attachment. Beat for about one minute until creamed, then gradually add granulated sugar and mix until smooth (about 1-2 minutes).
  5. Add the eggs, egg yolks, and vanilla extract to the mixture. Blend until fully incorporated.
  6. Gradually add in the dry ingredients mixture about 1/4 cup at a time until fully combined.
  7. On a clean surface lightly dusted with flour, press out your cookie dough into a long rectangle—no rolling pin needed!
  8. Spread an even layer of the cinnamon sugar filling onto the dough rectangle.
  9. Starting from one long edge of the rectangle, carefully roll up the dough into a log shape.
  10. Slice your rolled dough into approximately 10-12 cookies weighing about 4.5 oz each.
  11. Roll each piece into a ball while sealing in the filling. Place on a baking sheet lined with parchment paper and bake for about 9-11 minutes or until edges are lightly golden brown.
  12. Allow cookies to cool on the baking sheet for about 10-15 minutes before transferring them to a wire rack to cool completely.
  13. In a medium-sized bowl using a hand mixer, beat together softened cream cheese and butter until creamy. Gradually mix in powdered sugar along with vanilla extract and salt until smooth.
  14. Once cooled completely, spread frosting over each cookie.
