  • 2.5 lbs beef chuck
  • 2 tablespoons coconut oil
  • 1 large onion
  • 4 garlic cloves
  • 1 tablespoon fresh ginger
  • 2 tablespoons red curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 tablespoon brown sugar
  • Salt & black pepper to taste

Instructions

  1. Heat coconut oil in a Dutch oven over medium heat. Sauté sliced onion until translucent, approximately 5 minutes. Add minced garlic and grated ginger; cook until fragrant.
  2. Increase heat to medium-high and brown the beef chunks in batches, about 3-4 minutes per side. Remove and set aside.
  3. Stir in red curry paste, cumin, cinnamon, turmeric, and optional chili flakes for about 2 minutes until fragrant.
  4. Return the browned beef to the pot; add coconut milk, beef broth, brown sugar, salt, and pepper. Mix well.
  5. Bring to a simmer, reduce heat to low, cover, and slow-braise for about 2-3 hours until beef is fork-tender.
