  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk
  • 1 cup beef broth

Instructions

  1. Heat coconut oil in a heavy-bottomed pot over medium heat. Sauté chopped onion until translucent (about 5 minutes), then add minced garlic and grated ginger for another minute.
  2. Stir in curry powder, turmeric, cumin, smoked paprika, and optional cayenne pepper. Cook for about 30 seconds to release flavors.
  3. Add beef chunks to the pot; increase heat to medium-high and brown on all sides (5–7 minutes).
  4. Mix in the tomato paste; pour in coconut milk and beef broth, stirring until well combined.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for at least 2 hours until tender. Stir occasionally.
