  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup beef broth or water
  • 1 tbsp brown sugar
  • Juice of lime
  • 1 cup jasmine rice
  • 4 garlic naan, warmed

Instructions

  1. Prepare the ingredients by cutting the beef and slicing the onion.
  2. In a large pot, heat vegetable oil over medium heat, then sauté the onion until translucent.
  3. Add minced garlic and grated ginger; cook until fragrant.
  4. Season the beef with salt and pepper, then brown it in the pot for about 5-7 minutes.
  5. Stir in curry paste and ground turmeric; cook for another minute.
  6. Add coconut milk and beef broth; mix well with brown sugar and lime juice.
  7. Bring to a boil, reduce heat to low, cover, and simmer for about 2 hours until beef is tender.
  8. Cook jasmine rice according to package instructions while the beef simmers.
  9. Serve the braised beef over jasmine rice with warmed garlic naan on the side.
