  • 1½ cups corn (fresh or thawed frozen)
  • 1½ cups cherry tomatoes (halved)
  • ½ cup cucumber (finely chopped)
  • 2 tablespoons fresh basil (minced)
  • 3 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt to taste
  • Optional: crumbled feta cheese and Italian dressing

Instructions

  1. Prepare the dressing by whisking together 2 tablespoons olive oil, lime juice, and salt in a small bowl. Set aside.
  2. Heat the remaining olive oil in a skillet over medium heat and add the corn. Cook until tender.
