  • Olive oil
  • 1 lb chicken breast
  • 2 tablespoons unsalted butter
  • 1 tablespoon Cajun seasoning
  • 4 cloves garlic
  • 1/4 cup minced onion
  • 1/2 cup tomato sauce
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • Juice of 1/2 lemon
  • Fresh parsley for garnish

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and melt the butter over medium-high heat. Season the chicken with half of the Cajun seasoning and sear for 4-5 minutes on each side until golden brown. Remove from skillet, let rest, then slice.
  3. In the same skillet, sauté garlic and onion until fragrant, then stir in tomato sauce, heavy cream, chicken broth, lemon juice, and remaining Cajun seasoning. Simmer for 5 minutes.
  4. Add cooked pasta and Parmesan cheese to the sauce; toss to coat evenly. Return sliced chicken to the skillet and season with salt and pepper.
  5. Serve warm garnished with fresh parsley.
