  • 1 lb boneless skinless chicken breast or thighs
  • 12 oz rotini pasta
  • 4 oz cream cheese
  • 1 cup Velveeta cheese, cubed
  • 1 cup whole milk
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter (for searing)
  • 1 tbsp butter (for sauce)
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook rotini pasta in salted water until al dente (about 10 minutes). Drain and set aside.
  2. In a skillet, heat olive oil and butter over medium-high heat. Season chicken with Cajun seasoning and cook until golden-brown (6-8 minutes). Remove from skillet.
  3. In the same skillet, melt butter and sauté garlic. Add heavy cream, milk, cream cheese, and Velveeta; whisk until smooth.
  4. Stir in cooked pasta until well coated with sauce. Adjust thickness with reserved pasta water if necessary.
  5. Serve topped with seared chicken and garnish with fresh parsley.
