  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon vegetable oil
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup beef broth
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 1/4 cup warm water
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder

Instructions

  1. In a large pot over medium heat, heat vegetable oil and sear the beef until browned; set aside.
  2. In the same pot, sauté onions until translucent. Add garlic and ginger; cook until fragrant.
  3. Stir in spices and cook for an additional 30 seconds. Return beef to pot.
  4. Add coconut milk, chickpeas, beef broth, and tomato paste. Bring to a boil and then simmer for about 20 minutes.
  5. For the naan: combine flour, yogurt, warm water, sugar, and baking powder; knead until smooth.
  6. Divide dough into balls and roll into rounds. Cook in a skillet until golden brown on both sides.
