  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups (1 liter) chicken or beef broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 cup small pasta (such as ditalini or elbow macaroni)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach or basil, chopped
  • Extra Parmesan cheese for garnish
  • Fresh basil or parsley for garnish
  • Crushed red pepper flakes for added spice

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, black pepper, and parsley. Mix until just combined.
  2. Shape mixture into 1-inch meatballs.
  3. Heat olive oil in a large pot over medium heat. Cook meatballs in batches until browned on all sides; remove and set aside.
  4. In the same pot, sauté diced onion and celery until softened. Add minced garlic and cook until fragrant.
  5. Pour in diced tomatoes and chicken or beef broth. Stir in Italian seasoning, salt, and black pepper.
  6. Bring to a boil; add pasta and cook according to package instructions. Return meatballs to the pot.
  7. Stir in heavy cream and grated Parmesan cheese until well mixed.
  8. Just before serving, stir in chopped spinach or basil until wilted.
