  • 1 lb rotini pasta
  • 6 tbsp unsalted butter
  • 4 cups heavy cream
  • 1 cup grated Parmesan cheese, plus more for garnish
  • 1/2 cup chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 cup chopped fresh chives

Instructions

  1. In a medium bowl, toss chicken cubes with Cajun seasoning, smoked paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat; cook seasoned chicken until golden and cooked through (about 6-8 minutes). Remove from skillet.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant (about 1 minute).
  4. Cook rotini according to package instructions until al dente; drain and reserve some pasta water.
  5. In a large pot, melt more butter over medium heat; add garlic and cook briefly before adding heavy cream and chicken broth. Bring to a simmer.
  6. Stir in Parmesan cheese, seasonings, and simmer until sauce thickens (5-7 minutes).
  7. Combine cooked rotini with the sauce; add reserved pasta water if needed. Gently mix in the garlic butter chicken before serving.
