  • 2 ½ pounds zucchini
  • ¾ cup extra virgin olive oil
  • 1 cup diced sweet onion (e.g., Vidalia)
  • 1 ½ tablespoons minced garlic
  • 1 cup heavy cream
  • ¾ cup grated Romano cheese
  • Fresh basil, oregano, and mint

Instructions

  1. Cook the pasta according to package directions, reserving one cup of pasta water.
  2. Shred the zucchini using a box grater or food processor.
  3. In a large skillet over medium-high heat, add olive oil and sauté diced onion for three minutes until softened.
  4. Stir in red pepper flakes and minced garlic; cook for one minute until fragrant.
  5. Add shredded zucchini along with salt, pepper, and half of the chopped herbs. Cover and simmer for about 15 minutes.
  6. Remove the lid, stir in heavy cream and remaining herbs, then mix in grated cheese. Adjust consistency with reserved pasta water if needed.
