  • 3 lb chuck roast (trimmed)
  • Oil
  • 2 tbsp steak seasoning
  • 1 tbsp dried thyme
  • 1 cup beef broth
  • β…“ cup water
  • Optional: 2 lbs potatoes
  • Optional: 1 lb carrots
  • Optional: 1 yellow onion

Instructions

  1. Prepare the roast by coating it with oil and seasoning it generously with steak seasoning and thyme.
  2. Sear each side in a hot skillet for 2-3 minutes until browned; then transfer to the slow cooker.
  3. Pour beef broth into the skillet to deglaze, scraping up browned bits, then add this to the slow cooker.
  4. If using vegetables, prepare them and place on top of the roast in the slow cooker.
  5. Cook on low for 7-8 hours or high for 3.5-4 hours until tender.
  6. Check tenderness an hour before serving; add cornstarch mixed with water to thicken gravy if desired.
  7. Serve meat warm with gravy and enjoy!
