  • 2 (14.5 oz) cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup chopped yellow onion
  • 2 cloves garlic, chopped
  • 1 tsp salt
  • 1½ tsp dried oregano
  • ¾ tsp dried thyme
  • 1 tbsp ground cumin
  • Lemon wedges
  • Avocado slices
  • Greek yogurt
  • Chopped red onion
  • Fresh dill
  • Crumbled feta
  • Crushed red pepper flakes

Instructions

  1. Gather and prepare all ingredients by chopping onions and garlic and rinsing the white beans.
  2. In the crockpot, place the chicken breasts at the bottom. Add beans, chicken broth, onion, garlic, salt, oregano, thyme, and cumin.
  3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender.
  4. Remove the chicken, shred it using forks, then return to the pot and stir well.
  5. Serve warm with toppings like lemon wedges, avocado slices, Greek yogurt, or fresh dill.
