  • 2 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 4 cups chicken broth
  • 2 cups water
  • 2 teaspoons Italian seasoning
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 8 oz uncooked lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot or Dutch oven over medium heat, cook the Italian sausage until browned (5–7 minutes). Drain excess fat.
  2. Add chopped onion and sauté for 3 minutes; then stir in minced garlic and cook for another minute.
  3. Pour in crushed tomatoes, chicken broth, and water; stir in Italian seasoning and sugar. Season with salt and pepper. Bring to a simmer.
  4. Add broken lasagna noodles; cook until al dente (10–12 minutes).
  5. In a separate bowl, mix ricotta cheese, half of the mozzarella, and Parmesan cheese.
  6. Stir cheese mixture into the soup until creamy and combined.
