  • 8 ounces elbow pasta
  • 1/2 cup dill pickle juice
  • 1 cup cheddar cheese (small diced)
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 3 tablespoons white onion (finely chopped)
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 teaspoon Sriracha (or other hot sauce)
  • Salt and pepper to taste

Instructions

  1. Cook the elbow pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine the cooked pasta with half of the dill pickle juice and let it sit for 5 minutes before draining again.
  3. In another bowl, mix mayonnaise, sour cream, remaining dill pickle juice, Sriracha, salt, pepper, and fresh dill until smooth.
  4. Combine drained pasta with diced cheddar cheese, sliced pickles, chopped dill, and onion. Toss well with the dressing until evenly coated.
  5. Refrigerate for at least 4–6 hours before serving to allow flavors to meld.
