  • ½ cup milk
  • ½ cup vegetable oil
  • ½ cup hot coffee
  • 2 cups shredded phyllo dough (kataifi), finely chopped
  • 2 tablespoons butter
  • 1 cup pistachio cream
  • 4 oz milk or semi-sweet chocolate bar
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350°F and grease a 9-inch baking pan.
  2. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the egg, vanilla extract, milk, and vegetable oil; mix until smooth. Gradually stir in hot coffee.
  4. Pour batter into the prepared pan and bake for about 25 minutes or until a toothpick comes out clean.
  5. For the filling, toast kataifi with butter until golden brown. Mix with pistachio cream and set aside.
  6. To make ganache, heat chocolate and heavy cream in a microwave-safe bowl until melted and smooth.
  7. Once the cake has cooled, layer the pistachio filling on top and cover with ganache.
