  • 100 g super-fine almond flour
  • 65 g powdered sugar
  • 70 g egg whites (room temperature)
  • 75 g fine granulated sugar
  • ¼ teaspoon cream of tartar (optional)
  • ¼ teaspoon coarse kosher salt
  • Gel food coloring (if desired)
  • For Filling: 2 large egg yolks
  • ¼ cup granulated sugar
  • 3 ½ tablespoons milk
  • ½ cup unsalted butter (softened)
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 150°C (302°F) and line two baking sheets with Silpat or parchment paper.
  2. Sift almond flour and powdered sugar together in a bowl.
  3. In another bowl, whip egg whites until foamy; gradually add granulated sugar until stiff peaks form. Add cream of tartar if using.
  4. Gently fold the dry mixture into the whipped egg whites until smooth.
  5. If desired, add gel food coloring and mix gently.
  6. Pipe small circles onto prepared baking sheets; tap to release air bubbles.
  7. Let rest at room temperature for about 30 minutes until shells are firm.
  8. Bake for about 18 minutes; let cool completely on sheets before removing.
  9. Prepare filling by whisking egg yolks and sugar over medium heat until thickened; remove from heat and stir in milk, butter, and vanilla extract until smooth.
  10. Assemble macarons by pairing similar-sized shells and filling one half before topping with the other.
