- 1 medium cucumber (diced)
- 3 small mangos (peeled and diced)
- 1 medium red onion (diced)
- 1 can black beans (drained and rinsed)
- 1 can corn (drained and rinsed)
- Fresh basil (finely chopped)
- Garlic (grated or crushed)
- Red apple vinegar
- Extra virgin olive oil
- Sea salt
- Black pepper
- Fresh lemon or lime juice
- Avocado (diced)
- Cook the edamame according to package instructions; rinse under cold water until cooled.
