  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 1 lb mushrooms, quartered
  • 2 tablespoons tomato paste
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour

Instructions

  1. Heat olive oil in a large pot over medium heat. Season beef chunks with salt and pepper. Sear in batches until browned on all sides; remove and set aside.
  2. In the same pot, add onion, carrots, and garlic. Cook until the onion is translucent.
  3. Sprinkle flour over vegetables and stir well to coat evenly.
  4. Return beef to the pot. Stir in tomato paste, add bouquet garni, pour in beef broth, and bring to a boil.
  5. Reduce heat to low; cover and simmer gently for about 2 hours.
  6. About 30 minutes before serving, sauté mushrooms in a separate pan until golden brown; then add them to the stew and continue simmering.
