  • 1 salmon fillet
  • 2 medium potatoes, peeled & diced
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 garlic clove, smashed
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp honey or maple syrup
  • Pinch of chili flakes (optional)
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400F (200C). Toss diced potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  2. Melt butter in a skillet over medium heat and add smashed garlic. Season salmon with paprika, salt, and pepper; cook for 4-5 minutes per side.
  3. Steam baby carrots for about 5 minutes until tender. In a pan, melt butter and stir in honey (or maple syrup) and chili flakes; toss carrots in the glaze.
  4. Steam broccoli florets for 3-4 minutes until bright green; sprinkle lightly with salt.
  5. Plate salmon with roasted potatoes, glazed carrots, and steamed broccoli.
